Yes, I don’t think it should be a problem. The top hotels here have the best buffet vegetarian or otherwise. Canyon Ranch Cafe at Venetian resort has lots of organic food and veggie juices and meals.

Veggie Delight at Wynn hotel is another place with delicious vegetarian cuisine with raw vegetables creatively combined.

Carnivale World Buffet at Rio has a variety of vegetarian buffet from all countries like America, Japanese, Italian etc.

It has a big salad bar and a grille where you can have your choice-of ingredients like tofu or vegetable sauce to create your own dish. Vegetarian buffet at Stratosphere is also awesome!
